One of Pampanga’s special delicacies and pride is what we called “buro”. Oftentimes, my friends and relatives would request buro to my Mom. Especially during feast day, visitors would only look for my Mom’s special buro. Modestly aside, my Mom is known for its delicious “buro”, “embutido”, and “relyeno”. Unfortunately, I didn’t inherit my Mom’s cooking prowess hehe.  

However, I can share with you how to cook Pampanga’s pride: BURONG TILAPIA (Fermented Rice with Tilapia):

Step 1:  Prepare 3-5 pieces of small tilapia for a medium-size jar of buro.

 

Step 2:  Clean well, remove head, scales and gills then cut to 2 pieces.

Step 3:  Drain the water off the fish then mix with 2 cups of salt to form a brine solution.

Step 4:  Mix the fish to 5 cups of cooked rice. 

Step 5: Put in a clean jar and allow to ferment for 1-3 weeks. 

Step 6: Sautee with onions, garlic and tomatoes.Best served with fresh mustard leaves, or grilled eggplants. Shrimps and crabs are best alternate to tilapia. Bon appetit!
