One of Pampanga’s special delicacies and pride is what we called “buro”. Oftentimes, my friends and relatives would request buro to my Mom. Especially during feast day, visitors would only look for my Mom’s special buro. Modestly aside, my Mom is known for its delicious “buro”, “embutido”, and “relyeno”. Unfortunately, I didn’t inherit my Mom’s cooking prowess hehe.  

However, I can share with you how to cook Pampanga’s pride: BURONG TILAPIA (Fermented Rice with Tilapia):

Step 1:  Prepare 3-5 pieces of small tilapia for a medium-size jar of buro.
